This is a dish our young sous chef Spencer put together, It was very tasty so  I thought I would write about it because it is so great to see a young chef who is so eager to learn something new every day, and it is so awesome to see it.  He has a tremendous amount of raw talent, and no doubt he will nurture it. It is great to see passionate young chefs evolve.
