pork n scallop

This is a dinner i cooked for my family, who were visiting from the northwest,  It was a pleasure to cook for them and show them some of my work.

Pork loin, scallop, baby eggplant glazed in the juice from roasted beef, pickled zucchini, radish, pumpkin seeds.

Bubble gum

Bubble gum, coconut, black sesame.

This sounds a little strange but I assure you this combination works, It started with the bubble gum and what flavors do I think of when I chew it, for me I get coconut, passion fruit, strawberry etc.  So coconut seemed like a good candidate, then my first choice was corn for the sponge cake, which may work well also, But, I felt black sesame would do a better job contributing to the whole dish.

Bubble gum meringue and pudding, coconut ice cream, black sesame sponge.

Caramelized White chocolate

Carmalized white chocolate ganache, compressed strawberry, marcona almond in 3 forms: whole, shaved, bubbles, Strawberry sorbet, wasabi.

Foie and corn

Foie gras mousse, sweet corn gelle

most of the chicken

Confit and fried drumstick, breast, and fried oyster, Broccoli puree, asparagus, sauteed and compressed, celery, smoked chicken jus.
