Tuna
So this is a dish made by my Sous Chef Jorge Ortiz, this is basically a deconstructed version of the tuna tartare we do at Flip. He is a very talented chef, we sort of create inspiration for each other, always pushing foreward. I am excited to see what he does with his career, he is very young and knows so much already, I wish I saw things as he does when I was younger.
